We purchase all of our meat from local farms, as we are lucky enough to have an FDA approved local processor that the farmers use near us. We really try to reduce our carbon footprint, but there is always more than can be done!

I don't eat meat at all, and my husband and kids have cut back dramatically. We bike and walk to school and for errands, using our car as little as possible. We also tend to stick to local or seasonal produce as much as possible (the other kind is just too expensive anyway!) I also have cut way back on buying things, trying to use it up or wear it out before replacing things.

That's great that you guys have local resources for your meat. We do, too, here in Central Florida:
http://www.deepcreekranch.us/, which I'm not sure a lot of people know about. Getting the word out, increasing awareness, making a difference...baby steps, right?

I totally agree... we can always do more! Amy and her family are another great example of so much that can be done... wow!

Do you think the attitude is a lot different in Europe than here in the U.S.? I think it probably is (for the better there), but I don't really know. You and your family are doing so much! That's awesome! When I cut down to very little chicken only once in a while and decreased my husband's intake of it, I was glad for that change. We also subscribe to Meatless Mondays, and I believe you said you guys have the same thing on Thursdays?? I try to walk/bike/bus for errands, too - whenever possible. We can all do something, right?

Someone mentioned Thursdays in Europe to me...

By the way - I'm the same way about using things, too: reuse, repurpose, and reinvent whenever possible. I cannot stand materialism! And I LOVE thrift shops!!! :-)
