Going Meatless, for Just One Day a Week?

So you want to be more "green" and do the right things: give up the gas guzzling SUV, maybe recycle your garbage, but did you know cutting back on your meat consumption would actually help our global warming issue, too?

I LOVE this post!

We were down to eating meat only 2 or 3 days a week, but somehow lost the desire to keep it up.
I would say we skip meat 1 day a week now, but I really want to get back to predominately eating veggies and beans again.

It's such a great way to eat (less meat), isn't it? But I find it kind of tough sometimes, when for so long, meat was the staple. I still fix it for Hubby, but I find I eat a lot more beans than ever before.

How are you guys doing with this? Have you started to cut back yet?

It's amazing how much evidence is out there about the benefits of cutting back on meat consumption - for us and for the environment.
